Caramelized Sweet Potatoes

These sweet potatoes never fail to please! With four times more natural sugar than white potatoes, caramelization comes easy making them a tasty, fast, and easy side dish.

Rinse and dry the sweet potatoes, poke a few holes in them with a fork, then put them in a preheated 450-degree oven for 40 minutes, or until they’re soft all the way through. Remove and set aside.

Once they’re cool enough to handle, cut the sweet potatoes into quarters or sixths depending on their size. Heat a heavy frying pan over medium heat, add a couple splashes of oil and spread with a spatula to coat the bottom. Next, lightly sprinkle some kosher salt evenly around the surface of the pan then place the potatoes on top of the salt cut side down.

A bit of charring is great, but check the potatoes after a few minutes and adjust your heat accordingly so you don’t overdo it. Total cooking time should be about five minutes. When they are charred to your desired doneness, flip the potatoes over and turn the heat to low for a few minutes then serve.
