Halloumi with Caramelized Honey Peaches


Heat a couple of splashes of olive oil on medium heat in a non-stick pan then add the pitted peach halves cut side down and sear. After three minutes drizzle a couple tablespoons of honey into the pan, toss it around with the peaches, and cook for another two minutes. Remove and set aside.

Put the pan back on the heat and add two tablespoons of olive oil, wait 30 seconds, then add your half inch slices of halloumi. Cook for about two minutes per side, or until golden brown, then serve with the peaches.

Seared halloumi also makes a great addition to a salad, sandwich, or along with some grilled vegetables.
