The local tomatoes are still coming! Take advantage with this quick and easy tomato sauce, it comes together in only thirty minutes.
Throw a pound
of coarsely chunked tomatoes, two garlic cloves, a large squirt of anchovy
paste, and a quarter teaspoon each of kosher salt and black pepper into a food
processor.
With the
machine running, drizzle in a quarter cup of olive oil until smooth. Transfer
to a small pot, add a tablespoon of tomato paste and simmer uncovered for
fifteen minutes. As always, salt and pepper to taste.
To take it to
another level, add a handful of chopped basil, arugula, or a few pinches of red
chili flakes.
